The past week was filled with necessary adulting along with some experimenting in the kitchen to keep my sanity. My air conditioner unit in my laundry room was leaking water into the garage below our condo building. I received an email this week from our maintenance company saying that I was the likely culprit based on location, so I made a few calls and it was bad news bears.
Not only did I have to pay for my air conditioner to be fixed, but I was also informed that I needed a new water heater because my current one was about to explode at any moment. I thought the man was being a little dramatic, but I Googled and it really can kill you. The afternoon was spent working from home and frantically calling every air conditioner and HVAC company in Indy. $1,200 later and I am now the owner of a new water heater, which sadly looks identical to my old one. I was expecting something shiny, maybe even a different color. I am happy to report my laundry room is back and action and I am no longer flooding the garage. Cheers to adulting and cooking as therapy.
So, this week I made a few new dishes and my favorite was cauliflower fried rice. I had purchased the already chopped and shredded cauliflower rice at Trader Joe’s a few times, only to forget about it and forced throw it away a few days later. This time I was determined. I had an appointment with my plastic surgeon this week to evaluate how my facial scars are healing (improved since April!) and as I headed back from Carmel to downtown Indy, traffic came to a halt. So, I took the opportunity to get off at the Allisonville exit and treat myself to a few TJ items (also, wine).
The recipe could not be any easier and I took inspiration from the Skinny Taste cookbook. I have a habit of buying cookbooks, looking at them once, Googling the recipe later, and then altering the recipe the way I want to make it. Throw a bag of the cauliflower rice in a large pot over the stove, add sesame oil, diced white onion, frozen peas, diced carrots, soy sauce, and let it go for 10-15 minutes. I scrambled three eggs and added it to the rice mixture at the end. I also added leftover chicken and roasted broccoli to make it more filling. Nick added a little teriyaki sauce, but I thought it was flavorful enough without it.
This will be on repeat in our kitchen and we ate the entire dish in one sitting. The only thing I would add is water chestnuts, which is something I used to eat like candy as a kid. My mom always had a few tiny cans on hand for stir-fry and I was known to eat them straight up.
Last weekend I survived Fire Eye Fitness’ boot camp with my friend LP. As a devoted boot camper, LP could bring a friend for a free personal training session and it kicked my butt. Literally, I was too sore to sit the next day. The instructor quickly sized me up and knew my strengths and weakness. He could also tell that I mostly do Pilates and Pure Barre because of my breathing patterns and my core (ab) strength. I could plank all day, which is why he forced me out of my comfort zone into running. I hadn’t sprinted like that since high school, but it was the best kind of challenge – mentally and physically.
We celebrated our hour of pain with Garden Table juice and bacon. I’d recommend Fire Eye to anyone, especially if you’re looking for a personalized routine for your body type. There’s also a dog, Yeti, which makes kettle balls and crunches so much better when you’re next to a furry friend.
Now onto 1995. I recently overhauled my closet (again) and made stacks and stacks of things I no longer wear. It is possible to have too much Lilly Pulitzer, wild prints, shorts from high school, and on and on. With the help of my man, I let go of my sentimental side in exchange for my practical side. Since I cleaned my closet, I let myself order a few clearance items from….wait for it: Abercrombie & Fitch. I kid you not, their new line of clothing is adorable.
They still sell the sweatshirts with their name across the front, but they also have cute basics at ridiculous prices. We’re talking t-shirts and tanks for $5-10. My current obsession is a pair of high-waisted jeans that I got for $20. So, while I downsized and decluttered, I was also intentional about putting anything new into my closet. I’ve also figured out what I gravitate towards wearing the most and it’s the basics.
Here are a few photos of me in the high-waisted jeans. This is my usual size and I also ordered another pair one size larger for a looser fit. At $20, you can’t beat it.
Also, would I be a ‘real’ blogger if I didn’t say something about the yearly Nordstrom sale? You have to have a Nordstrom card to shop early, which is kind of elitist, but I work in marketing, so I get it. If you don’t have the card, the sale prices will be available to the public July 21st. Spoiler alert: most things sell out immediately.
Fashion bloggers have changed the game – they post their favorites and the Nordstrom website crashes the first few days. I talked to a cashier at Keystone yesterday and she said it was like a sport among the women that shopped the first day. I don’t plan to spend money I don’t have and as you can see above, I just purchased my 1995 wardrobe at a discounted prices. But, I have compiled a few inexpensive items if you want to treat yourself – many of these I already own.
Here are my favorites in case you decide to investigate:
- I bought this pale pink vest for $45. It has pockets and I can see myself layering it on the daily once the weather gets cold.
- My favorite high waisted yoga pants on sale for $35. Zella is a great brand if you don’t want to fork over a ton at Lululemon. I’ve been known to wear these to work with a blazer. The burgundy color is a nice alternative to always wearing black. Another great Zella deal: this one piece. I got mine for $20 at Nordstrom Rack and while you may feel like an idiot wearing a onesie, it is the comfiest yoga get-up ever.
- The go everywhere jumpsuit. This is very similar to the black jumpsuit I wore on our first date and it will take you anywhere. It’s like wearing pajamas, but you still feel put together.
- If you don’t buy anything else, buy this leather jacket for $65. I got it last year and I wore it non-stop. I received a lot of compliments and I felt much cooler than I really am.
CAULIFLOWER FRIED RICE
Via Skinny Taste
- 1 medium head cauliflower or one bag of riced cauliflower
- 1 tbsp sesame oil
- 3 eggs
- pinch of salt
- cooking spray
- 1/2 small onion, diced fine
- 1/2 cup frozen peas and carrots
- 2 garlic cloves, minced
- 3 tbsp soy sauce (I eyeballed this)
Remove the core and let the cauliflower dry completely.
Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous – don’t over process or it will get mushy. Set aside and repeat with the remaining cauliflower.
Combine eggs in a small bowl and beat with a fork. Season with salt.
Heat a large saute pan or wok over medium heat and spray with oil.
Add the eggs and cook, turning a few times until set; set aside.
Add the sesame oil and saute onions, scallion whites, peas and carrots and garlic about 3 to 4 minutes, or until soft.
Add the cauliflower to the saute pan along with soy sauce. Mix, cover and cook 5-6 minutes, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside.
Add the egg then remove from heat.
Add chicken or broccoli if desired
