I have quite a bit of bourbon left from the mint julep cupcakes I made for the Derby, so I thought why not add a little bourbon to my cookies? I know I am not the first person to think of adding bourbon, I mean this is America after all, and I had countless recipes to choose from. I went with the Washington Post’s version since it had by far the most bourbon in it. Go big or go home. I am not here to add a tablespoon, let’s try five or six. You could call these bourbon with a little cookie. It reminds me of the way I eat my oatmeal every morning: cinnamon with a little oatmeal. If it is true that cinnamon prevents diabetes, then I should be covered for life because I pour it on.
So, how were the cookies? AMAZING. I felt as cool as Don Draper in Mad Men as I ate these, but maybe with a few less problems….I also don’t think Don’s primary source of bourbon intake was in cookie form. You can taste the hint of bourbon, but I didn’t think it was overkill. So, if you are a bourbon enthusiast, by all means dip your cookie in a glass of bourbon. Or get really creative and make a glaze with bourbon, powdered sugar and a bit of milk. The possibilities are endless. Just be responsible and maybe walk, don’t drive.
We had a recent birthday at work, so I took these in for my advertising friends (modern day Mad Men) and I packed them in our basket of goodies for the Symphony on the Prairie. The music was John Williams (think Star Wars, Harry Potter, Jaws, and ET) and I was in nerd heaven! My friend Joanna is a sandwich making extraordinaire and brought turkey, prosciutto, cheese, tomato sandwiches on french bread. She also packed a pesto mayo and grey poupon. Ali brought her famous guac and chips. Add a bottle of good wine (I was introduced to a new friend, Kim Crawford) and the bourbon cookies and it was the perfect girls night.
Speaking of the Derby, the STL startup/PR community has an annual Derby held by Coolfire Studios and each team enters a derby car to compete. This year I was able to watch it via Periscope. As a PR person I have to keep up with the latest social media trends and I am so impressed with Periscope (it links to your Twitter account). I think it is superior to Vine and it is a fun way to see an event when you cannot attend. Last year I missed it because I had vertigo and this year my health is back, but I am in another state. If only I could teleport some bourbon cookies. Winston helped me cheer on team Push Up and the screenshots are from the Periscope livestream.
BOURBON CHOCOLATE CHIP COOKIES
Recipe via the Washington Post
- 2 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons (1 stick) unsalted butter, at room temperature
- 1 cup plus 2 teaspoons granulated sugar
- 1/2 cup packed dark brown sugar
- 1 large egg
- 6 tablespoons bourbon
- 2/3 cup semisweet chocolate chips
Whisk together the flour, baking soda and salt in a bowl.
Combine the butter and sugars and beat on low, then medium speed for 1 or 2 minutes, until blended.
Add the egg and beat on low speed. Add the bourbon one tablespoon at a time.
On low speed, gradually add the flour mixture, beating until well incorporated, then add the chocolate chips.The recipe says to cover and refrigerate for 12-24 hours, but I like to live life on the edge, so I made these in the morning, refrigerated them, and baked them after work.
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper or Silpat
Bake on the upper and lower racks for 6 to 8 minutes, then rotate the sheets top to bottom and front to back. Bake for 7 minutes or so; the cookies should be browned on the edges and a lighter color at the center.
Cool the cookies on the sheets for 5 minutes, then transfer them to wire racks to cool completely
