Compost Cookies + Ladies and their Language, Le Creuset Tour, Misty Copeland, Beer, & Harper Lee

One of my friends from the Statehouse texted me last night about these cookies she had at bakery in Elkhart, Indiana. I love when people eat something and think of me. I love the free inspiration and their confidence in me to re-create it. After her description and some googling, I found these compost cookies. It has a hint of coffee, chocolate chips, butterscotch, pretzels, and potato chips. Rumor has it that these were created because a bakery did not have enough chocolate chips, so they improvised. The result is a party in your mouth. Seriously, stop what you are doing and make these bad boys and if you are ever in Elkhart, stop by B on the River for the cookie that inspired this post! They also made my kitchen smell amazing! The hint of coffee, butterscotch and chocolate are pretty fragrant.

And now for the side rant about ladies and their language. You have been warned!

There are a lot of articles out there dictating what women should and shouldn’t say. Don’t say sorry because it undermines your authority and makes you look weak. Don’t use a qualifier because it makes you appear insecure and on and on. NY Magazine offers a rebuttal to this and says “It makes women self-conscious and makes women feel incompetent and unable to figure out the right way to talk. There is no right way, especially if you want to sound like yourself, and not some weird, stilted robot.”

I could not agree more. Sure, I agree that women everywhere should be their strong, vocal self, but they should also be themselves. There’s a Catch-22: if women are seen as too aggressive then they are also to blame when they receive a negative reaction. How often do you read articles about men needing to change their tone in the workplace? You can’t win by simply removing a word from your conversations. It’s a frame of mind and if you’re confident and genuine, you will in turn receive the respect you deserve. That’s my two cents. Also, I do realize that the author, Ann Friedman, is a well known feminist, but feminist shouldn’t be a dirty word. I won’t be quoting Jane Fonda anytime soon, but I will leave you with a little Emma Watson: “The more I spoke about feminism, the more I realized that fighting for women’s rights has too often become synonymous with man hating. If there is one thing I know for certain is that this has to stop.”

OTHER FINDS

Have you ever wanted to see inside the Le Creuset factory? You know the fancy pottery brand from France that you try to pronounce correctly to the salesperson at Williams Sonoma and fail every time? Well, you’re in luck. It’s not open to the public, but David Lebovitz got a tour and documented it! ps – You can sometimes find it at TJ Maxx, which is where most of my Le Creuset is from.

Cup of Jo featured Misty Copeland in her ‘Who Are Your Role Models‘ series. Copeland is the first African American ballet dancer to be the principal dancer at the American Ballet Theater. This is a big freaking deal. BIG. I am so in awe of her.

Serious Eats named the best beer in each state and a few of my favorites won. Three Floyds for IN and Yazoo for TN! Woot!

If you’re a Harper Lee fan, you can read the first chapter of ‘Go Set a Watchmen’ via the WSJ. They even have an audible version narrated by Reese Witherspoon. This made my week. You will be immediately transported back to Maycomb and Scout is now a young lady.

COMPOST COOKIES

Recipe via Leite’s Culinaria

2 sticks unsalted butter (at room temperature)

1 cup granulated sugar

2/3 cup tightly packed light brown sugar

1 tablespoon corn syrup

1 large egg

1/2 teaspoon vanilla extract

1 1/3 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon kosher salt

3/4 cup chocolate chips

1/2 cup butterscotch chips

1/2 cup finely crushed graham crackers

1/3 cup old fashioned rolled oats

2 1/2 teaspoons ground coffee (freshly ground, not used grinds)

2 cups potato chips (crush them slightly)

1 cup pretzels (crushed)

1. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugars, and corn syrup on medium-high for 2 to 3 minutes. Scrape down the sides of the bowl with a spatula, add the egg and vanilla.

2. Reduce the speed to low and add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no more than 1 minute.

3. With the mixer still on low speed or with a wooden spoon, add the chocolate chips, butterscotch chips, graham crust, oats, and coffee and mix just until incorporated. Add the potato chips and pretzels and paddle, still on low speed, just until incorporated.

4. Line a baking sheet with parchment paper or Silpat. Using an ice cream scoop, portion the dough onto the parchment. Pat the top of each cookie dough dome so it becomes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate at least overnight and up to 1 week. Libby note: I cheated here and refrigerated them for three hours and then baked them. The dough should be cold though!

5. Preheat the oven to 375°F

6. Arrange the flattened, chilled blobs of cookie dough a minimum of 4 inches apart on the prepared sheets and bake for 15 to 18 minutes. When done, they should be very faintly browned on the edges. 16 minutes was perfect for me, but they will be a little under done in the middle – cookies continue to bake on the cookie sheet after you remove them from the oven.
