Let it Brie burgers – inspired by Five Star

This week we went to my favorite burger place in STL, Five Star Burgers. I take my burgers seriously and Five Star does not mess around. Really good quality beef – even the bison is great. I typically get my usual – which is a ‘Libby original:’ classic burger, add goat cheese, gluten free bun (it actually tastes just as good, if not better than the original) and of course, sweet potato fries to ‘share’ with my man.

However, the burger of the month is the ‘Let it Brie.’ Get it, ‘Let it Be?’ As a Beatles and brie fan, I had to get it. OH MY GOD. IT WAS AMAZING. Brie and pears go together like pb&j, but it had never occurred to me to put it on a burger. I probably shouldn’t have eaten this in public because my manners went to the wayside and I demolished it in minutes. I re-created the brie burger below and my parents sent us Harry & David pears, so it was meant to be. I apologize for the lack of a final photo, but let’s just say I was in such a hurry to eat it, that I forgot to take a photo.

PEAR AND BRIE BURGERS

Makes 4 burgers (1/4 lb each)

Ingredients:

Brie (Trader Joe’s brie bites are perfect for this – 1 per burger)

Beef (I used 94% lean)

Pears

Buns (I used Udi’s wholegrain)

Sweet potato

Mixed greens for a side salad (Optional)

Directions:

First, peel the skin off of the sweet potato and cut into slices since this will take the longest to cook. Place on a silpat and coat with Pam cooking spray and coat with sea salt and pepper. Place in the oven at 400 degrees.

Get a pan nice and hot. Make 4 patties out of the beef. I like my burgers medium, so it takes about 10-15 minutes total, flipping in the middle.

In a separate pan, sauté the pears (thinly sliced) in a little bit of butter and cinnamon.

Next, assemble your burgers. Toast the buns in the skillet with the burgers. Next top your burger with one Brie bite and a few pear slices. Serve with the sweet potato fries and enjoy!
