The perfect brownie – NY inspired

Last weekend we took a trip to NYC and as we sat on the tarmac at LaGuardia and reflected about our favorite part of the trip, we both mentioned Amy’s Bread. After seeing Avenue Q off Broadway on Sunday night, we stopped for a sweet treat and coffee at Amy’s Bread. We shared a brownie with walnuts and while the brownie was good, it was not spectacular. We both enjoyed the simplicity of spending time together in a quiet little shop. I think this sums up why I enjoy baking – it brings people together and certain foods bring back memories.

I set out to make a brownie a la Amy’s, but even better. I am pretty happy with the result. Enjoy!

INGREDIENTS
  • 1 stick of unsalted butter, cut into small pieces
  • 1¼ cup sugar
  • ¾ cup cocoa powder
  • 2 eggs
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 10 tablespoons white flour (the amount sounds weird, but it works)
  • 1/2 a dark chocolate bar, broken into pieces
  • Handful of chopped walnuts
INSTRUCTIONS
  1. Heat the oven to 325 degrees and butter a pan with foil hanging over the edge.
  2. Melt the butter in a pan on the stove and whisk continuously until the butter is a golden brown.
  3. Remove the pan from heat and stir in the sugar. Add the cocoa powder, salt, and baking powder. Let cool.
  4. Add the eggs, then the vanilla extract and the flour. Beat until smooth.
  5. Fold in the chocolate pieces and walnuts. Spread the batter into the prepared pan.
  6. Bake for 12-15 minutes depending on how you like your brownies.
