pumpkin hot chocolate, aka Libby’s version of the pumpkin spice latte

I have yet to give in and buy a PSL (pumpkin spice latte) at Starbucks. For some reason the thought of paying $5 for a sugary overly processed, but delicious, beverage kind of kills me. Especially after a very popular article went viral containing the actual ingredients. What is ‘pumpkin flavoring?’

So, here is my version. I experimented with the Vitamix until I was happy with the result. This is not as sweet as the original, so feel free to add a little more sugar to taste. My boyfriend commented that the smell was dead on, but that it reminded him more of a pumpkin hot chocolate. Hey, I’ll take it..

Makes two servings

INGREDIENTS

2 cups of vanilla almond milk
Eyeball some cinnamon
2 tablespoons pumpkin
A few dashes of pumpkin pie spice
2 packets of Sugar in the Raw
2 tablespoons vanilla extract
¼ cup cold brewed coffee (I used decaf)
Top with redi-whip
